Step by step recipe

1 Beans with tomatoes : Photo of step #1Prepare 6 tomatoes. 40 min.
2 Beans with tomatoes : Photo of step #2Peel 250 g white haricot beans. 10 min.
3 Beans with tomatoes : Photo of step #3Cut 250 g cooked chicken in small pieces.

Peel, wash and mince 1 shallot.

4 Beans with tomatoes : Photo of step #4In a pan on medium fire, pour 2 tablespoons olive oil and when it's hot add minced shallot, salt and pepper.

Make cook for 1 or 2 minutes.

5 Beans with tomatoes : Photo of step #5Add peeled tomatoes, salt again and slow fire. 2 min.
6 Beans with tomatoes : Photo of step #6Make cook slowly, stiring from time to time, covered, until tomatoes are soft.

Note: We leave pan covered to get more tomatoes juice, which will be absorbed by beans.

10 Beans with tomatoes : Photo of step #10At the last time add parsley to the mixture, check seasoning and serve. 3 min.

Remarks

If you don't have chicken, replace it with small pieces of bacon or just leave it out.

If you use tinned (canned) beans, just add them at the same time as the chicken.

For this recipe all proportions can be varied, so don't hesitate to change them according to your taste or what you have available.
