Step by step recipe

Spinach brik parcels : Photo of step #1 Cut 200 g cooked spinach.

Cut 150 g feta into small pieces.

Prepare and chop 1 shallot finely.
Stage 2

Spinach brik parcels : Photo of step #2 Heat 1 tablespoon olive oil in a small frying pan. Add the chopped shallot, salt and pepper and cook for 1 or 2 minutes without colouring.

Set aside.

Place a spoonful of mixture near the bottom edge of a brik sheet.

When very hot, add the parcels and fry until browned all over.

Serve without delay.

Remarks

You can also deep fry these parcels. This is very quick but, unfortunately, raises the fat content.



If you can't find brik pastry, you can use filo instead.
