Leek and potato soup

For 4 people, you will need:

• 1 1 kg potatoes
• 2 3 leeks
• 3 30 g butter
• 4 2 chicken stock cubes
• 5 2 litres water
• 6 1 shallot
• 7 fine (or table) salt
• 8 pepper

Step by step recipe

• 1: Peel 1 kg potatoes.
• 2: Cut into small pieces, wash and dry in a towel.
• 3: Wash 3 leeks.
• 4: Cut into small pieces.
• 5: In a very large pan or casserole, melt 30 g butter over a medium fheat then add 1 shallot chopped and salt.
  Cook for a minute or two.
• 6: Add the potatoes and leeks, mix well.
• 7: Add 2 litres water and 2 chicken stock cubes.
• 8: Cook with the lid on until the potatoes are soft (well cooked).
• 9: Blend to give a really smooth soup.
• 10: Taste to be sure that's sufficiently well salted, add pepper if you like it.
  Serve as it is or with a dash of cream and/or croutons (small pieces of toasted or fried bread).

Remarks

For a richer version, you can , before blending, add 300 ml liquid cream.
