Here is a very simple recipe, preferably for a barbecue or plancha, but could be made in the kitchen. As for any summer-barbecue-backyard recipe, all proportons can be varied according to taste.

Step by step recipe

Stage 1

Marinated tuna with herbs : Photo of step #1 In a dish pour 4 tablespoons olive oil, juice of 1 lime, salt & pepper.
Stage 2

Marinated tuna with herbs : Photo of step #2 Wash, drain, and dry 1 bunch coriander and 1 handful fresh mint leaves.

Marinated tuna with herbs : Photo of step #5 Prepare 6 fillets fresh tuna: wash and dry with towel or absorbant paper .

Cut into pieces, put in the dish and mix well to cover all the tuna with marinade. Salt and pepper again, then put plastic film on the dish, and refrigerate for one hour (this can be done the day before if you want).

Marinated tuna with herbs : Photo of step #6 Cook on barbecue not too close to the fire, and baste the top regularly with the remaining marinade, using a brush.

Cook the other side in the same way. This will keep the tuna moist.

Remarks

Could be made with other fish if preferred, even with chicken breasts.
