Ramekins with almonds, apples and lemon

For 6 ramekins, you will need:

• 1 2 apples
• 2 25 g butter
• 3 25 g caster sugar
• 4 150 g Lemon Confectioner's Custard
• 5 150 g Almond cream or frangipane
• Total weight: 710 grams

Step by step recipe

• 1: Peel 2 apples and cut into small pieces.
• 2: In a small frying pan over medium heat, melt 25 g butter and when hot, pour in the apple pieces.
• 3: Add 25 g caster sugar, stir, and brown, stirring occasionally.
  Set aside.
• 4: Preheat your oven to 180°C (360°F).
  Prepare the ramekins, and pour a layer of lemon custard into the bottom.
• 5: Add the apples.
• 6: Finish with a layer of almond cream.
• 7: Bake in the oven for around 15-20 minutes, until the almond cream on top is golden brown.
  Enjoy warm or cold.

Remarks

You can, of course, add a dash of calvados to flambé the apples at the end of cooking.
A piping bag is ideal for dividing the 2 creams (custard and almond).
