Step by step recipe


Stage 1 - 5 min.
Ramekins with almonds, apples and lemon : Stage 1
Peel 2 apples and cut into small pieces.

Stage 2 - 3 min.

In a small frying pan over medium heat, melt 25 g butter and when hot, pour in the apple pieces.

Stage 3 - 8 min.

Add 25 g caster sugar, stir, and brown, stirring occasionally.

Set aside.

Stage 4 - 3 min.
Ramekins with almonds, apples and lemon : Stage 4
Preheat your oven to 180°C (360°F).

Prepare the ramekins, and pour a layer of lemon custard into the bottom.

Stage 5 - 3 min.

Add the apples.

Stage 6 - 3 min.
Ramekins with almonds, apples and lemon : Stage 6
Finish with a layer of almond cream.

Stage 7 - 20 min.
Ramekins with almonds, apples and lemon : Stage 7
Bake in the oven for around 15-20 minutes, until the almond cream on top is golden brown.

Enjoy warm or cold.
Remarks
You can, of course, add a dash of calvados to flambé the apples at the end of cooking.

A piping bag is ideal for dividing the 2 creams (custard and almond).
Keeping: 1 or 2 days in the fridge.
