Quick courgette soup with cheese

• 1 4 courgettes
• 2 1 litre water
• 3 1 chicken stock cube
• 4 2 tablespoons Mont d'or cheese
• 5 salt
• 6 pepper
• Total weight: 2,040 grams

Step by step recipe

• 1: Wash 4 courgettes, scrub with scratch sponge, cut ends and discard them.
• 2: Slice courgettes fairly thinly (about 1/2 cm. or 1/4 inch), put in a pan, cover with 1 litre water and 1 chicken stock cube, salt and bring to the boil.
  Cook until courgettes are quite soft.
• 3: Blenduntil smooth.
• 4: Add 2 tablespoons Mont d'or cheese, and blend again.
• 5: Check seasoning, it's ready !

Remarks

Mont d'or cheese can easily be replaced by other soft cheese like Morbier or Reblochon, or 2 - 3 portions of "Laughing Cow".
