Step by step recipe

1	Prepare 750 g Jerusalem artichokes.
2	Chop 2 hard-boiled eggs.
3	Put the sliced Jerusalem artichokes into a salad bowl.
4	Add the chopped hard-boiled eggs, parsley and chives, then add 5 tablespoons French dressing (vinaigrette) and mix well.
5	Your Jerusalem artichoke salad is ready.

Remarks

For a more bistro-style version, add a few fried croutons.
