Bisto-style canapés

For 20 pieces, you will need:

• 1 2 slices cured ham
• 2 ½ baguette
• 3 4 tablespoons olive oil
• 4 3 eggs
• 5 2 tablespoons liquid cream
• 6 20 g butter
• 7 100 g cheese
• 8 salt
• 9 pepper
• Total weight: 565 grams

Step by step recipe

• 1: Fry 2 slices cured ham on both sides in a frying pan with no added fat.
  Set aside.
• 2:

  The bread

  Slice ½ baguette into fairly thin rounds (about 1/4 inch or 1/2 cm).
• 3: Brush both sides of each slice with oil.
  Using the same pan as for the ham on high heat, fry the bread on both sides.
• 4: Do this in batches if necessary, transferring the cooked slices onto a sheet of cooking parchment laid on a baking sheet.
• 5:

  The eggs

  In a bowl, beat together 3 eggs, 2 tablespoons liquid cream, salt and pepper.
• 6: Still using the same frying pan, but now on medium heat, pour in 20 g butter. When good and hot, add the beaten eggs.
• 7: Turn down the heat and gently pull the eggs from the edge in towards the centre so that they cook evenly.
  Stop as soon as they begin to set; do not overcook.
  Preheat the oven to 360°F (180°C).
• 8:

  Assemble the canapés

  Put a piece of fried ham on each slice of bread.
• 9: Add a little of the egg.
• 10: Top with a slice of cheese.
• 11:

  Cooking

  Pop in the oven for 10 minutes, just until the cheese is melted.
  Serve either hot or warm.

Remarks

For the cheese, use whatever you like: sliced if soft-paste, grated if hard.
If you prefer butter to oil, you can butter the bread slices in stage 3.
