Cauliflower, red bean and avocado salad

For 4 people, you will need:

• 1 300 g cauliflower
• 2 300 g tinned red kidney beans
• 3 1 avocado
• 4 herbs of your choice
• 5 150 g Rémoulade dressing
• Total weight: 1,000 grams

Step by step recipe

• 1: Prepare 300 g cauliflower and slice thinly.
  The ideal tool for this is a mandolin, but you can also use a food processor or grater.
• 2: Add 300 g tinned red kidney beans, rinsed and drained.
• 3: Then add the herbs and 1 avocado, cut into slices.
• 4: Finish by adding 150 g Rémoulade dressing and mix well.
  Your salad is ready.

Remarks

For the dressing, you can also opt for a rémoulette dressing or a simple french dressing (vinaigrette).
