Indian rice pudding

For 6 people, you will need:
- 1 1 litre whole milk
- 2 100 g brown sugar
- 3 200 g rice
- 4 3 stars anise
- 5 10 greens cardamoms beans
- 6 4 pinches cinnamon
- 7 50 g raisins
- 8 50 g whole almonds
- 9 50 g cashew nuts
- Total weight: 1,465 grams

Step by step recipe
- 1: In a large saucepan over low heat, pour in 1 litre whole milk, add 100 g brown sugar, 200 g rice, 3 stars anise, 10 greens cardamoms beans, 4 pinches cinnamon and 50 g raisins.
Cook gently, uncovered, stirring occasionally. - 2: Meanwhile, start your oven at 150°C (300°F) and place a baking sheet on which you've poured 50 g whole almonds and 50 g cashew nuts to roast for about 15 minutes (no need to preheat the oven for this).
- 3: Once the dried fruit has cooled, chop coarsely.
- 4: Continue cooking the rice until tender and creamy.

- 6: ...and mix it all together.
- 7: Your Indian rice is ready.
Remarks
If possible, use basmati rice to get even more in the spirit of Indian cuisine.
