1: In a large saucepan over low heat, pour in 1 litre whole milk, add 100 g brown sugar, 200 g rice, 3 stars anise, 10 greens cardamoms beans, 4 pinches cinnamon and 50 g raisins. Cook gently, uncovered, stirring occasionally.
2: Meanwhile, start your oven at 150°C (300°F) and place a baking sheet on which you've poured 50 g whole almonds and 50 g cashew nuts to roast for about 15 minutes (no need to preheat the oven for this).
3: Once the dried fruit has cooled, chop coarsely.
4: Continue cooking the rice until tender and creamy.
5: Add the chopped dried fruit...
6: ...and mix it all together.
7: Your Indian rice is ready.
Remarks
If possible, use basmati rice to get even more in the spirit of Indian cuisine.
