Salad paysanne

• 1 700 g cooked potatoes
• 2 700 g cooked green beans
• 3 1 red onion
• 4 150 g small pieces of smoked bacon
• 5 parsley
• 6 5 tablespoons French dressing (vinaigrette)

Step by step recipe

• 1: Put 700 g cooked green beans into a salad bowl.
• 2: Add the 700 g cooked potatoeses, sliced.
• 3: Prepare 1 red onion, then chop finely and add to the bowl.
• 4: Fry 150 g small pieces of smoked bacon in a small frying pan on high heat.
• 5: Add to the bowl.
• 6: Add the chopped parsley and 5 tablespoons French dressing (vinaigrette). Mix well.
  Your rustic French salade paysanne is ready.

Remarks

For a warm version of this salad, once the potatoes and beans are in the bowl, pop them in the microwave for 1 or 2 minutes to warm through, then continue the rest of the recipe as normal and serve without delay.
Still hungry? For a more filling version, add croutons fried in the bacon fat.
