Salad paysanne
This rustic traditional dish (literally "peasant salad") combines cold sliced potatoes and green beans (cooked separately) with chopped red onion and fried lardons.

The salad is finished with a vinaigrette dressing and parsley, or your choice of herbs.

Step by step recipe


Stage 1 - 1 min.
Salad paysanne
Put 700 g cooked green beans into a salad bowl.

Stage 2 - 4 min.
Salad paysanne
Add the 700 g cooked potatoeses, sliced.

Stage 3 - 4 min.

Prepare 1 red onion, then chop finely and add to the bowl.

Stage 4 - 5 min.

Fry 150 g small pieces of smoked bacon in a small frying pan on high heat.

Stage 5 - 1 min.
Salad paysanne
Add to the bowl.

Stage 6 - 2 min.
Salad paysanne
Add the chopped parsley and 5 tablespoons french dressing (vinaigrette). Mix well.

Your rustic French salade paysanne is ready.
Remarks
For a warm version of this salad, once the potatoes and beans are in the bowl, pop them in the microwave for 1 or 2 minutes to warm through, then continue the rest of the recipe as normal and serve without delay.

Still hungry? For a more filling version, add croutons fried in the bacon fat.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
