Croquants de Cordes

Step by step recipe
- 1: Preheat oven to 150°C (300°F).
Coarsely chop 125 g whole almonds. - 2: Pour them onto a baking tray and roast for 15 minutes at 150°C (300°F), then take them out and turn the oven up to 170°C (340°F) for the rest.
Leave to cool. - 3: Pour 200 g caster sugar and 80 g flour into a bowl and whisk to combine.
- 4: Add 70 g egg white, and 1 tablespoon rum and mix again.
- 5: Pour in the roasted almonds and stir again.
- 6: Pour (or better, pocket) small heaps onto a sheet of baking paper laid out on a baking sheet.
- 7: Bake for 12-15 minutes.
Remove from the sheet when hot, then cool on a wire rack. - 8: Enjoy warm or cold.
Remarks
For a chocolate version, add 10 g cocoa powder to the flour.
The rum can be replaced by orange blossom water.
