Step by step recipe
- 1: Preheat the oven to 390°F (200°C).
Put 100 g butter and 125 g caster sugar into a food-mixer bowl.
Mix on slow speed until evenly mixed. - 2: Add 250 g flour and 2 eggs.
- 3: Beat until thooughly mixed.
- 4: Shape the mixture into into small heaps using 2 teaspoons, well spaced out on a baking sheet.
- 5: Place an almond on the top of each heap.
- 6: And bake for about 15 minutes.
- 7: Watch carefully towards the end of the cooking time: they are done when the edges are browned.
Leave to cool before eating.
Remarks
These small biscuits are the equivalent of Proust's madeleine for me: I can't make them without finding myself back, in my thoughts, in that (distant, very distant) time when I was about ten years old.
