Little lime tarts

For 10 littles tarts, you will need:

Step by step recipe
- 1: Roll out the sweetcrust pastry, line the tart tins or moulds and blind bake the tart cases.
- 2: Leave to cool on a wire rack.
- 3: Meanwhile, prepare the lime curd.
- 4: Then fill the tarts with lime curd while it is still warm and tap gently to give an even and smooth surface to the tarts.
You can make this as one large tart rather than small ones, but it will be tricky to cut as the slices are rather fragile.
