Step by step recipe
- 1: Wash and remove the stalk from 2 tomatoes.
You can peel them, but it's not essential. - 2: Cut the tomatoes into small cubes and pour into a large bowl.
- 3: Pour over tomatoes 4 tablespoons vinegar, 4 tablespoons olive oil, chopped herbs, salt and pepper, then mix well.
Preheat your oven to 200°C (390°F). - 4: Place 4 slices bread on a sheet of baking paper on a baking sheet.
- 5: Using a brush, carefully oil each slice of bread, then season lightly with salt and pepper.
- 6: Place the tomatoes on each slice of bread.
- 7: Scatter the mozzarella over the top.
- 8: Bake for 10-15 minutes.
- 9: Enjoy warm or cold.
Remarks
If possible, choose a sourdough bread, a rustic country-style loaf, which you can also toast before oiling.
You can try replacing the mozzarella with gorgonzola cheese, which is very successful.
