1: Wash and remove the stalk from 2 tomatoes. You can peel them, but it's not essential.
2: Cut the tomatoes into small cubes and pour into a large bowl.
3: Pour over tomatoes 4 tablespoons vinegar, 4 tablespoons olive oil, chopped herbs, salt and pepper, then mix well. Preheat your oven to 200°C (390°F).
5: Using a brush, carefully oil each slice of bread, then season lightly with salt and pepper.
6: Place the tomatoes on each slice of bread.
7: Scatter the mozzarella over the top.
8: Bake for 10-15 minutes.
9: Enjoy warm or cold.
Remarks
If possible, choose a sourdough bread, a rustic country-style loaf, which you can also toast before oiling. You can try replacing the mozzarella with gorgonzola cheese, which is very successful.
