Bruschetta

For 4 bruschettas, you will need:

• 1 2 tomatoes
• 2 4 tablespoons vinegar
• 3 4 tablespoons olive oil
• 4 herbs of your choice
• 5 4 slices bread
• 6 4 tablespoons olive oil
• 7 120 g mozzarella
• 8 salt
• 9 pepper
• Total weight: 700 grams

Step by step recipe

• 1: Wash and remove the stalk from 2 tomatoes.
  You can peel them, but it's not essential.
• 2: Cut the tomatoes into small cubes and pour into a large bowl.
• 3: Pour over tomatoes 4 tablespoons vinegar, 4 tablespoons olive oil, chopped herbs, salt and pepper, then mix well.
  Preheat your oven to 200°C (390°F).
• 4: Place 4 slices bread on a sheet of baking paper on a baking sheet.
• 5: Using a brush, carefully oil each slice of bread, then season lightly with salt and pepper.
• 6: Place the tomatoes on each slice of bread.
• 7: Scatter the mozzarella over the top.
• 8: Bake for 10-15 minutes.
• 9: Enjoy warm or cold.

Remarks

If possible, choose a sourdough bread, a rustic country-style loaf, which you can also toast before oiling.
You can try replacing the mozzarella with gorgonzola cheese, which is very successful.
