For 6 people, you will need:

• 1 1 kg white haricot beans
• 2 50 g cream
• 3 500 g cooked meat
• 4 50 g grated cheese
• Total weight: 1,600 grams

Step by step recipe

• 1: Pass 1 kg white haricot beans (cooked beforehand or from a tin) through a vegetable mill into a saucepan...
• 2: ...to make a bean purée.
• 3: Put on medium heat. When hot, stir or whisk in 50 g cream.
  Salt, pepper, then check the seasoning.
  Set aside.
• 4: Preheat the oven to 390°F (200°C).
  Butter a gratin dish and arrange 500 g cooked meat in the bottom.
• 5: Spread the bean purée over the meat.
• 6: Top with 50 g grated cheese.
• 7: Bake for about 30 minutes until nicely browned.

Remarks

For a crustier topping, you can add a little home-made breadcrumb coating and mix this with the grated cheese in stage 6.
For something closer to a real cassoulet, use chunks or slices of sausage instead of the meat.
