Par "fromage râpé" on entend un fromage à votre gout, que vous avez sous la main, et qui est râpé, pour pouvoir être plus facilement utilisé dans la recette.
Vous pouvez bien sûr utiliser les classiques Comté, Gruyère, Parmesan, Cheddar, etc. mais également des saveurs plus originales comme du chèvre sec ou du Beaufort.

Il est toujours nettement meilleur marché, et bien meilleur en gout, de râper soi même son fromage, que d'en acheter du déjà râpé en sachet.

If you want to use it:

Pour râper plus aisément du fromage, il faut qu'il soit un peu sec, pensez à le laisser quelques heures au frigo avant de la râper, ce sera plus facile.
