Step by step recipe
- 1: Prepare the 800 g green beans and cut them into small pieces.
- 2: In a large skillet over medium heat, add 30 g butter, and when it has melted, add crushed 1 garlic clove, 1 bayleaf, and 1 sprig thyme.
Stir for 1 minute to infuse the butter with the flavors of the herbs and garlic. - 3: Pour in the green beans, add water until they are halfway covered, season with salt, and stir.
- 4: Cover the green beans or place a circle of paper over them, lower the heat slightly, and let them cook gently.
- 5: Ideally, green beans should be cooked until there is little or no water left in the pan; remove them from the heat at that point, stir well, and check the seasoning.
- 6: While the green beans are cooking, sauté 80 g small pieces of smoked bacon in a small skillet without any fat, to your liking.
If you like the flavor, deglaze the pan with 4 tablespoons vinegar at the end of cooking. - 7: Add the pan-fried bacon bits to the green beans and toss to combine.
- 8: Finally, add the pesto to taste, mix well, and it's ready.
Remarks
If you don't like using vinegar to
deglaze the bacon bits, use a little dry white wine, or, if you don't have any, just a little water.
