Bistro-style beetroot salad

For 4 people, you will need:

• 1 600 g raw beetroot
• 2 2 tablespoons vinegar
• 3 2 slices bread
• 4 2 tablespoons Clarified butter
• 5 2 slices cured ham
• 6 parsley
• 7 3 tablespoons Rémoulade dressing
• 8 salt
• 9 pepper
• Total weight: 885 grams

Step by step recipe

• 1: Peel, rinse and dry 600 g raw beetroot, then cut into small dice (a mandolin is the ideal tool for this).
• 2: Salt and pepper the beetroot, drizzle 2 tablespoons vinegar over, mix well and leave to one side.
• 3: Dice 2 slices bread...
• 4: ...and fry with 2 tablespoons Clarified butter in a small frying pan on high heat until golden brown.
  Set aside.
• 5: Use the same pan to fry 2 slices cured ham.
  Leave to cool, then cut into strips.
• 6: Thoroughly drain the diced beetroot and transfer to a salad bowl.
• 7: Add the croutons, ham pieces, some chopped parsley and 3 tablespoons Rémoulade dressing.
  Mix well.
• 8: Your salad is ready.

Remarks

You can use soy sauce instead of vinegar in stage 2.
