1 | In a large saucepan over low heat, pour in 1 litre whole milk, add 100 g brown sugar, 200 g rice, 3 stars anise, 10 greens cardamoms beans, 4 pinches cinnamon and 50 g raisins.
Cook gently, uncovered, stirring occasionally. | |
2 | Meanwhile, start your oven at 150°C (300°F) and place a baking sheet on which you've poured 50 g whole almonds and 50 g cashew nuts to roast for about 15 minutes (no need to preheat the oven for this). | |
3 | Once the dried fruit has cooled, chop coarsely. | |
4 | Continue cooking the rice until tender and creamy. | |
5 | Add the chopped dried fruit... | |
6 | ...and mix it all together. | |
7 | Your Indian rice is ready. | |
If possible, use basmati rice to get even more in the spirit of Indian cuisine.
