Lemon Mayonnaise

For 300 g, you will need:

• 1 1 egg
• 2 1 tablespoon mustard
• 3 200 ml oil
• 4 Salt
• 5 Pepper
• 6 1 lemon
• Total weight: 395 grams

Step by step recipe

1	Use a jug or high-sided container. Add 1 egg, 1 tablespoon mustard, 200 ml oil, Salt and Pepper. Grate the zest of a lemon into the container.
2	Squeeze one tablespoonful of lemon juice and add this.
3	Blend for a few seconds...
4	...and your lemon mayonnaise is ready.

Remarks

If you'd like you mayonnaise extra tangy, you can add more lemon juice, up to two tablespoonsful.
