| 1 | Use a jug or high-sided container. Add 1 egg, 1 tablespoon mustard, 200 ml oil, salt and pepper.
Grate the zest of a lemon into the container. |  |
| 2 | Squeeze one tablespoonful of lemon juice and add this. |  |
| 3 | Blend for a few seconds... |  |
| 4 | ...and your lemon mayonnaise is ready. |  |
Remarks
If you'd like you mayonnaise extra tangy, you can add more lemon juice, up to two tablespoonsful.
