Lemon Mayonnaise : Photo of step #1 Use a jug or high-sided container. Add 1 egg, 1 tablespoon French mustard, 200 ml oil, salt and pepper.

Grate the zest of a lemon into the container.

Remarks

If you'd like you mayonnaise extra tangy, you can add more lemon juice, up to two tablespoonsful.
