1: Thoroughly wash 750 g potatoes. Choose medium-sized rather than enormous ones.
2: Put into a saucepan, cover with cold water and put on to boil. Cook until tender.
3: Drain the potatoes and leave to cool slightly. Cut lengthways into wedges. Preheat the oven to 430°F (220°C).
4: Put the wedges into a bowl. Salt ,pepper, then add 2 tablespoons flour and 2 tablespoons chilli spices. Mix gently to coat evenly in the flour and spices.
5: Pour 4 tablespoons olive oil over and mix again to coat well in the oil (add a little more if necessary).
