Soft apple cookies

For 20 pieces, you will need:

• 1 150 g flour
• 2 130 g brown sugar
• 3 150 g butter
• 4 150 g rolled oats
• 5 30 g raisins
• 6 80 g cream
• 7 40 g flakeds almonds
• 8 5 g baking powder
• 9 3 pinches fine (or table) salt
• 10 2 apples
• Total weight: 1,095 grams

Step by step recipe

• 1: Put into a mixer bowl: 150 g flour, 130 g brown sugar, 150 g butter, 150 g rolled oats, 30 g raisins, 80 g cream, 40 g flakeds almonds, 5 g baking powder and 3 pinches fine (or table) salt.
  Peel 2 apples and cut into small pieces. Add to the bowl.
• 2: Knead until evenly mixed.
• 3: Weigh the dough out into equal pieces of about 40 g.
  Preheat the oven to 390°F (200°C).
• 4: Roll the dough into balls with your hands (if you are making these with children, this is the bit they enjoy best), and arrange these on a sheet of cooking parchment laid on a baking sheet.
• 5: Flatten into thickish discs.
• 6: Bake for about 20 minutes.
  Leave to cool on a wire rack.

Remarks

You will note that there is no egg in this recipe. Using cream instead makes the cookies softer.
