1: In a high-sided container, pour 1 egg, 1 teaspoon mustard, 150 ml oil, salt and pepper.
2: Blend for a few seconds to set the mayonnaise.
3: Prepare 1 avocado, cut it into pieces and add it, along with (possibly) 1 pinch vitamin C , and 1 tablespoon lime juice.
4: Blend again for a few seconds to incorporate the avocado...
5: ... your avocado mayonnaise is ready.
Remarks
For the oil, use a neutral one (peanut, for example), but for an even stronger taste, try avocado oil. If you like this combination, add a little chopped fresh coriander at the end.
