This version of mayonnaise, as creamy as ever but with a delicious avocado flavor, is a perfect accompaniment to fish, vegetables and even canapés.

Step by step recipe


Stage 1 - ⌛ 5 min.
Avocado mayonnaise : Stage 1
In a high-sided container, pour 1 egg, 1 teaspoon mustard, 150 ml oil, salt and pepper.

Stage 2 - ⌛ 1 min.
Avocado mayonnaise : Stage 2
Blend for a few seconds to set the mayonnaise.

Stage 3 - ⌛ 3 min.
Avocado mayonnaise : Stage 3
Prepare 1 avocado, cut it into pieces and add it, along with (possibly) 1 pinch vitamin C , and 1 tablespoon lime juice.

Stage 4 - ⌛ 1 min.
Avocado mayonnaise : Stage 4
Blend again for a few seconds to incorporate the avocado...

Stage 5
Avocado mayonnaise : Stage 5
... your avocado mayonnaise is ready.
Remarks
For the oil, use a neutral one (peanut, for example), but for an even stronger taste, try avocado oil.

If you like this combination, add a little chopped fresh coriander at the end.
Keeping: 1 or 2 days in the fridge, protected by cling film.
