In a small gratin dish, place a layer of cream on the bottom. If you have one, a piping bag is ideal.
13: Quickly dip a sponge cake into the reduced apple juice on each side...
14: ...and place it on top of the cream layer.
15: Do this until you have a tightly packed layer of cookies.
16: Top with a second layer of cream, then a second layer of soaked cookies.
17: Finish with a final layer of cream.
18: Cover with film and chill in the fridge for at least 2 hours.
19: Just before serving, remove the cling film and sprinkle the apple crisp over the top.

Remarks
If this is a recipe for adults, you can add 2 or 3 tablespoons of "Manzanita" Spanish apple liqueur to the reduced, cold apple juice, as the green apple flavor it brings is a perfect match for the recipe. As an alternative to spoon cookies, if you can find any, I recommend Savoiardi Italian cookies.
