Apple Tiramisu
For this apple version of tiramisu, we first make an apple crisp to sprinkle over the top, then dip the cookies in reduced apple juice.

The result is a tiramisu that's still very creamy, but with a deliciously pronounced apple flavor.

Step by step recipe

Apple crisp


Preheat your oven to 120°C (250°F).

Wash, dry and slice 1 apple as thinly as possible, using a mandolin if possible.

Stage 2 - ⌛ 3 min.

Place the apple slices on a sheet of baking paper and sprinkle with sugar.

Place in the oven at 120°C (250°F) and cook/dry for 30-40 minutes, until lightly colored, to obtain apple potato chips.

Let them cool, then put them in a blender.

Then grind to a powder, and your apple crisp is ready.

Store in a closed jar in a dry place.

Reduced apple juice


Pour 1 litre apple juice and possibly 1 glass Calvados (apple liqueur) into a saucepan over medium heat.

Reduce by half.

Then leave to cool.

The tiramisu cream


In the bowl of a mixer, pour cold 250 g liquid cream, cold 250 g Mascarpone, 2 eggs, 90 g caster sugar and 10 g vanilla sugar.

...until you obtain a smooth, light cream.

Assembly


In a small gratin dish, place a layer of cream on the bottom. If you have one, a piping bag is ideal.

Quickly dip a sponge cake into the reduced apple juice on each side...

...and place it on top of the cream layer.

Do this until you have a tightly packed layer of cookies.

Top with a second layer of cream, then a second layer of soaked cookies.

Finish with a final layer of cream.

Cover with film and chill in the fridge for at least 2 hours.

Just before serving, remove the cling film and sprinkle the apple crisp over the top.

Remarks
If this is a recipe for adults, you can add 2 or 3 tablespoons of "Manzanita" Spanish apple liqueur to the reduced, cold apple juice, as the green apple flavor it brings is a perfect match for the recipe.

As an alternative to spoon cookies, if you can find any, I recommend Savoiardi Italian cookies.
Keeping: 1 or 2 days in the fridge, protected by cling film.
