Mascarpone fondant with two lemons

Step by step recipe
- 1:  Preheat oven to 180°C (360°F).
 Pour 6  eggs, 300 ml  milk and 120 g  caster sugar into the bowl of a mixer.
- 2:  Add 500 g  Mascarpone, 100 g  flour, and the juice and zest of 1  lemon and 2  limes.
- 3:  Whisk for 2 or 3 minutes until smooth.
- 4:  Pour into the non-stick mould of your choice (in this case, a 24 cm or 9.5 inch diameter springform tin).
- 5:  Bake at 180°C (360°F) for 40 minutes.
 Allow to cool before serving.
Remarks
Feel free to increase the volume of lemon juice, 2 limes for example, if you want a stronger taste.
