Mascarpone fondant with two lemons

For 4 people, you will need:

• 1 6 eggs
• 2 300 ml milk
• 3 120 g caster sugar
• 4 500 g Mascarpone
• 5 100 g flour
• 6 1 lemon
• 7 2 limes
• Total weight: 1,670 grams

Step by step recipe

• 1: Preheat oven to 180°C (360°F).
  Pour 6 eggs, 300 ml milk and 120 g caster sugar into the bowl of a mixer.
• 2: Add 500 g Mascarpone, 100 g flour, and the juice and zest of 1 lemon and 2 limes.
• 3: Whisk for 2 or 3 minutes until smooth.
• 4: Pour into the non-stick mould of your choice (in this case, a 24 cm or 9.5 inch diameter springform tin).
• 5: Bake at 180°C (360°F) for 40 minutes.
  Allow to cool before serving.

Remarks

Feel free to increase the volume of lemon juice, 2 limes for example, if you want a stronger taste.
