Greek style sandwiches

For 4 toasts, you will need:

• 1 4 slices bread
• 2 ½ tomato
• 3 4 tablespoons Purple Pesto
• 4 120 g feta
• 5 4 tablespoons olive oil
• 6 thyme
• Total weight: 490 grams

Step by step recipe

• 1: Place 4 slices bread on a baking sheet.
  Preheat the oven to 390°F (200°C).
• 2: Rub the top of each slice with ½ tomato to soak up the tomato juice.
• 3: Spread a layer of pesto on each slice of bread.
• 4: Spread the feta cheese on top.
• 5: Drizzle with olive oil and sprinkle with thyme.
• 6: Bake in the oven for about 10 minutes.
  Enjoy warm or cold.

Remarks

If you don't have purple pesto, use pesto sauce instead.
For a crispier texture, you can toast the toast in the toaster before rubbing it with the tomato.
