Individual creamy endive gratins

Step by step recipe
- 1: Prepare 1 onion and chop finely.
If the mushrooms are dried, soak them in warm water, if they are fresh preparethem. - 2: Pour 2 tablespoons olive oil into a pan on medium heat. When hot, add the chopped onion, salt and pepper and cook for 1 minute.
- 3: Add 200 ml cream and the mushrooms, salt and pepper, then leave to thicken slightly on low heat.
Check seasoning.
Preheat the oven to 200°C (390°F). - 4: Prepare 8 endives (head of chicory), and divide between the buttered dishes.
- 5: Cover with the cream and mushroom mixture.
- 6: And bake in the oven...
- 7: ...until the top is nicely browned.
Remarks
You can replace the chanterelles with other mushrooms. Dried mushrooms, such as black trumpets (also known as horn of plenty) or morels are particularly good.
