Roasted leeks with pesto

Step by step recipe
- 1: Preheat your oven to 200°C (390°F).
Prepare 800 g leek, cut them into small pieces. - 2: Place on a baking sheet or pan, sprinkle with olive oil and thyme (fresh if possible), and season with salt and pepper.
- 3: Place in oven for about 30 minutes, until leeks are nicely colored/grilled.
- 4: Chop 4 hard-boiled eggs.
- 5: Serve with a layer of leeks, chopped hard-boiled egg and a generous dollop of pesto.
Remarks
To sprinkle the leeks with oil and thyme, you can put them in a salad bowl, pour in oil, thyme, salt and pepper and mix well, before pouring onto the plate.
