Roasted leeks with pesto

For 4 people, you will need:

• 1 800 g leek
• 2 olive oil
• 3 thyme
• 4 4 hard-boiled eggs
• 5 8 tablespoons Pesto
• 6 salt
• 7 pepper
• Total weight: 1,120 grams

Step by step recipe

• 1: Preheat your oven to 200°C (390°F).
  Prepare 800 g leek, cut them into small pieces.
• 2: Place on a baking sheet or pan, sprinkle with olive oil and thyme (fresh if possible), and season with salt and pepper.
• 3: Place in oven for about 30 minutes, until leeks are nicely colored/grilled.
• 4: Chop 4 hard-boiled eggs.
• 5: Serve with a layer of leeks, chopped hard-boiled egg and a generous dollop of pesto.

Remarks

To sprinkle the leeks with oil and thyme, you can put them in a salad bowl, pour in oil, thyme, salt and pepper and mix well, before pouring onto the plate.
For the pesto, don't hesitate to innovate with a Greek-style pesto or a coriander-cashew pesto, among others
