Spinach and Mushrooms with Pesto

For 4 people, you will need:

• 1 4 tablespoons olive oil
• 2 2 shallots
• 3 500 g mushrooms
• 4 400 g cooked spinach
• 5 50 g cream
• 6 150 g Pesto
• 7 salt
• 8 pepper
• Total weight: 1,210 grams

Step by step recipe

• 1: In a saucepan over medium heat, pour in 4 tablespoons olive oil and when it is hot add 2 shallots minced.
  Add salt and pepper, cook for 1 minute without browning.
• 2: Add prepared and chopped 500 g mushrooms, salt again and mix well...
• 3: ...and cook to your liking, typically until the mushrooms have run out of water.
• 4: Add 400 g cooked spinach...
• 5: ... then 50 g cream.
  Stir and cook for a few minutes, stirring occasionally, until the cream has reduced.
• 6: Remove from heat and add Ing5, mix well, ready.
• 7: Serve alone or with pasta or rice for example.

Remarks

You can use a classic pesto, or a variation like coriander-cashew pesto or tomato pesto sauce.
