Warm haricot bean salad

For 4 people, you will need:

• 1 400 g white haricot beans
• 2 1 tablespoon olive oil
• 3 150 g small pieces of bacon
• 4 50 g butter
• 5 2 slices bread
• 6 chives
• 7 5 tablespoons French dressing (vinaigrette)
• Total weight: 790 grams

Step by step recipe

• 1: Cook 400 g white haricot beans until soft.
• 2: Drain and keep hot.
• 3: Pour 1 tablespoon olive oil into a small frying pan on high heat. When really hot, add 150 g small pieces of bacon and fry.
• 4: Meanwhile melt 50 g butter in another pan on high heat, then add 2 slices bread cut into cubes.
  Fry until lightly browned.
• 5: Put the beans into a salad bowl, then add the lardons with their cooking fat.
• 6: Finsh by adding the croutons, the chopped chives and 5 tablespoons French dressing (vinaigrette).
  Mix well and serve immediately while still warm.

Remarks

If you are using dried beans, leave them to soak overnight in cold water before cooking.
