Warm haricot bean salad

Step by step recipe
- 1: Cook 400 g white beans until soft.
- 2: Drain and keep hot.
- 3: Pour 1 tablespoon olive oil into a small frying pan on high heat. When really hot, add 150 g small pieces of bacon and fry.
- 4: Meanwhile melt 50 g butter in another pan on high heat, then add 2 slices bread cut into cubes.
Fry until lightly browned. - 5: Put the beans into a salad bowl, then add the lardons with their cooking fat.
- 6: Finsh by adding the croutons, the chopped chives and 5 tablespoons French dressing (vinaigrette).
Mix well and serve immediately while still warm.
Remarks
If you are using dried beans, leave them to soak overnight in cold water before cooking.
