1: Preheat oven to 180°C (360°F). Prepare 2 fillets fish (whiting if possible), remove all bones, dry, then season with pepper and salt on each side.
2: In a baking dish, pour 2 tablespoons olive oil and place 2 sprigs tarragon on top.
3: Place the whiting fillets on top and bake for 7-10 minutes.
4: Meanwhile, prepare and grate 2 carrots. Pour the grated carrots into a large bowl, and add 1 tablespoon Mustard, 1 tablespoon cream, finely chopped 1 spring onion (scallion), salt and pepper.
5: After 7-10 minutes, remove the fish but do not turn off the oven.
6: Divide the carrots among the whiting fillets...
7: ...and return to the oven for 10 minutes.
8: Serve immediately, garnished with a sprig of tarragon.
Remarks
You can, of course, use fish fillets other than whiting, depending on the season and location. If you have old-fashioned mustard, use it instead of classic mustard, as the seeds add a little extra texture. You can also add a dash of Espelette pepper to the mustard, to enhance the taste a little.
