Step by step recipe


Stage 1 - 5 min.
Whiting fillet with mustard carrots
Preheat oven to 180°C (360°F).

Prepare 2 fillets fish (whiting if possible), remove all bones, dry, then season with pepper and salt on each side.

Stage 2 - 1 min.
Whiting fillet with mustard carrots
In a baking dish, pour 2 tablespoons olive oil and place 2 sprigs tarragon on top.

Stage 3 - 10 min.
Whiting fillet with mustard carrots
Place the whiting fillets on top and bake for 7-10 minutes.

Stage 4 - 5 min.
Whiting fillet with mustard carrots
Meanwhile, prepare and grate 2 carrots.

Pour the grated carrots into a large bowl, and add 1 tablespoon Mustard, 1 tablespoon cream, finely chopped 1 spring onion (scallion), salt and pepper.

Stage 5 - 1 min.

After 7-10 minutes, remove the fish but do not turn off the oven.

Stage 6 - 2 min.

Divide the carrots among the whiting fillets...

Stage 7 - 10 min.

...and return to the oven for 10 minutes.

Serve immediately, garnished with a sprig of tarragon.
Remarks
You can, of course, use fish fillets other than whiting, depending on the season and location.

If you have old-fashioned mustard, use it instead of classic mustard, as the seeds add a little extra texture.

You can also add a dash of Espelette pepper to the mustard, to enhance the taste a little.
Keeping: Enjoy within minutes of removing from the oven.
