1 | Mix together 150 g Greek yoghurt, 100 g cream cheese and 1 tablespoon lemon juice. Salt lightly and pepper generously. Check the seasoning. Set aside. | |
2 | Chop 40 g cashew nuts. set aside. | |
3 | Lay a sheet of brik pastry in front of you. | |
4 | Spread a bed of spinach over the third nearest to you, then add a layer of cheese mixture and scatter cashew nuts on top. | |
5 | Roll up the pastry into a neat parcel, like a spring roll. | |
6 | Prepare all the rolls like this. | |
7 | Pour a little oil into a large frying pan on high heat. When really hot, fry the rolls until golden brown all over. | |
8 | Serve without delay so the rolls can be enjoyed while they are deliciously crisp. |
