1 | Thoroughly wash 750 g potatoes. Choose medium-sized rather than enormous ones. | |
2 | Put into a saucepan, cover with cold water and put on to boil. Cook until tender. | |
3 | Drain the potatoes and leave to cool slightly. Cut lengthways into wedges. Preheat the oven to 430°F (220°C). | |
4 | Put the wedges into a bowl. Salt ,pepper, then add 2 tablespoons flour and 2 tablespoons chilli spices. Mix gently to coat evenly in the flour and spices. | |
5 | Pour 4 tablespoons olive oil over and mix again to coat well in the oil (add a little more if necessary). | |
6 | Lay a sheet of cooking parchment on a baking sheet and arrange the wedges on it so that they don't touch. | |
7 | Bake for 30 to 40 minutes until nicely browned. |
