1 | Cut 200 g cooked spinach. Cut 150 g feta into small pieces. Prepare and chop 1 shallot finely. | |
2 | Heat 1 tablespoon olive oil in a small frying pan. Add the chopped shallot, salt and pepper and cook for 1 or 2 minutes without colouring. Set aside. | |
3 | Put the spinach into a bowl with the shallot, feta, 1 egg, salt, pepper... | |

5 | Roll up the parcels: Place a spoonful of mixture near the bottom edge of a brik sheet. | |
