Step by step recipe

• 1: Prepare 850 g mushrooms, cut them in the height, in 4 or more according to their size.
  It is necessary to try not to cut them too small, we want to have "of the chew", that is to say a sensation of a certain firmness in mouth.
• 2: Prepare and finely slice 1 onion.
• 3: Melt 50 g butter in a large pan on medium heat, When frothing well, add the onion, salt and pepper.
  Cook for 1 minute without colouring.
• 4: Add the mushrooms, turn the heat up high, mix well...
• 5: ...and fry until browned, stirring frequently.
• 6: Add 300 ml red wine and 1 tablespoon reduced veal stock, then salt, pepper and mix well.
• 7: Leave to reduce until hardly any liquid is left.

Remarks

This is a recipe that works best with rather firm mushrooms, which stay better when cooked.
