Mushroom bourguignon

- 3 50 g butter
- 4 300 ml red wine
- 5 1 tablespoon reduced veal stock

Step by step recipe
- 1: Prepare 850 g mushrooms, cut them in the height, in 4 or more according to their size.
It is necessary to try not to cut them too small, we want to have "of the chew", that is to say a sensation of a certain firmness in mouth. - 2: Prepare and finely slice 1 onion.
- 3: Melt 50 g butter in a large pan on medium heat, When frothing well, add the onion, salt and pepper.
Cook for 1 minute without colouring. - 4: Add the mushrooms, turn the heat up high, mix well...
- 5: ...and fry until browned, stirring frequently.
- 6: Add 300 ml red wine and 1 tablespoon reduced veal stock, then salt, pepper and mix well.
- 7: Leave to reduce until hardly any liquid is left.
- 8: Check the seasoning.
- 9: Serve on its own, or to go with meat, for example.
Remarks
This is a recipe that works best with rather firm mushrooms, which stay better when cooked.
