Pork and mushroom duo

Step by step recipe
- 1: Cut 200 g pork meat and 200 g smoked pork belly (or thick cut streaky bacon) into small pieces and set aside.
- 2: Prepare 500 g mushrooms and cut into pieces.
In a frying pan over very high heat, pour in 3 tablespoons olive oil and, when hot, add the mushrooms. - 3: Sauté until nicely colored.
Season with salt, then transfer to a plate. - 4: In the same frying pan, over medium heat this time, pour in 2 tablespoons olive oil and when hot, add the diced smoked bacon on its own.
- 5: Toast for 2 or 3 minutes, stirring occasionally.
- 6: Add the diced meat, crushed garlic clove and season with salt and pepper.
- 7: Cook all the ingredients together, keeping an eye on the meat: when it's done, you've finished cooking.
- 8: Pour in the mushrooms and stir.
- 9: Add the cream, salt and pepper, stir and thicken to taste.
Check seasoning. - 10: Remove and discard the garlic clove, and serve with chopped chives if possible.
Remarks
You can use veal instead of pork in this recipe.
