Stage 1/13 : 20 min.

Peel 10 shallots, cut into fairly thin rings.

Put a pan on medium heat, add 50 g butter cut into small pieces. As soon as it begins to fry, add shallots, and stir fairly roughly to start separating the rings. They should fall into ribbons when cooked.

Do not salt at this stage.
