Ramekins with almonds, apples and lemon

Step by step recipe
- 1: Peel 2 apples and cut into small pieces.
- 2: In a small frying pan over medium heat, melt 25 g butter and when hot, pour in the apple pieces.
- 3: Add 25 g caster sugar, stir, and brown, stirring occasionally.
Set aside. - 4: Preheat your oven to 180°C (360°F).
Prepare the ramekins, and pour a layer of lemon custard into the bottom. - 5: Add the apples.
- 6: Finish with a layer of almond cream.
- 7: Bake in the oven for around 15-20 minutes, until the almond cream on top is golden brown.
Enjoy warm or cold.
Remarks
You can, of course, add a dash of calvados to flambé the apples at the end of cooking.
A piping
bag is ideal for dividing the 2 creams (custard and almond).
