Scrambled eggs with butter-fried bread and fresh spinach

• 1 200 g cooked spinach
• 2 8 Scrambled eggs (Oeufs brouillés)
• 3 6 slices bread
• 4 40 g butter
• 5 salt
• 6 pepper
• Total weight: 532 grams

Step by step recipe

• 1: Prepare 200 g cooked spinach, set aside.
  Heat plates.
• 2: Cut 6 slices bread, remove crust and cut each slice into medium sized pieces.
  Butter both sides.
• 3: Heat a frying pan on medium heat, when it's hot, put in bread slices.
  Brown on each side.
• 4: Prepare scrambled eggs.
  Heat spinach in the same pan with a knob of butter.
• 5: On the hot plates, divide out spinach, add eggs and fried bread.
  Serve immediately.

Remarks

Add a dash of balsamic vinegar on the eggs for a bit more punch.
