Spinach and Mushrooms with Pesto

For 4 people, you will need:

• 1 4 tablespoons olive oil
• 2 2 shallots
• 3 500 g mushrooms
• 4 400 g cooked spinach
• 5 50 g cream
• 6 150 g Pesto
• 7 salt
• 8 pepper
• Total weight: 1,210 grams

Step by step recipe

1	In a saucepan over medium heat, pour in 4 tablespoons olive oil and when it is hot add 2 shallots minced. Add salt and pepper, cook for 1 minute without browning.
2	Add prepared and chopped 500 g mushrooms, salt again and mix well...
3	...and cook to your liking, typically until the mushrooms have run out of water.
4	Add 400 g cooked spinach...
5	... then 50 g cream. Stir and cook for a few minutes, stirring occasionally, until the cream has reduced.
6	Remove from heat and add Ing5, mix well, ready.
7	Serve alone or with pasta or rice for example.

Remarks

You can use a classic pesto, or a variation like coriander-cashew pesto or tomato pesto sauce.
