Avocado mayonnaise

For 400 g, you will need:

• 1 1 Egg
• 2 1 teaspoon Mustard
• 3 150 ml oil
• 4 1 tablespoon lime juice
• 5 1 avocado
• 6 1 pinch vitamin C (optional)
• 7 salt
• 8 pepper
• Total weight: 470 grams

Step by step recipe

1	In a high-sided container, pour 1 Egg, 1 teaspoon Mustard, 150 ml oil, salt and pepper.
2	Blend for a few seconds to set the mayonnaise.
3	Prepare 1 avocado, cut it into pieces and add it, along with (possibly) 1 pinch vitamin C , and 1 tablespoon lime juice.
4	Blend again for a few seconds to incorporate the avocado...
5	... your avocado mayonnaise is ready.

Remarks

For the oil, use a neutral one (peanut, for example), but for an even stronger taste, try avocado oil.
If you like this combination, add a little chopped fresh coriander at the end.
