Pan-fried cheese, egg and spinach toastie

For 4 people, you will need:

• 1 2 eggs
• 2 1 tablespoon olive oil
• 3 8 slices bread
• 4 50 g butter
• 5 300 g cooked spinach
• 6 150 g cheese
• Total weight: 1,015 grams

Step by step recipe

• 1: Beat 2 eggs rapidly in a bowl, then salt and pepper. Cook with 1 tablespoon olive oil in a small frying pan on medium heat, rather like an omelette or scrambled egg.
  Don't overcook; the eggs should not dry out.
  Set aside.
• 2: Butter 8 slices bread.
• 3: Put a large frying pan on medium heat and add the bread slices, butter side down.
• 4: Fry all the slices until browned.
• 5: Top half the fried bread on the un-fried side with egg.
• 6: Add the spinach.
• 7: Top with slices of cheese (Brie here).
• 8: Finish the sandwich with a second slice of bread and press down gently.
• 9: Put back in the pan on low heat...
• 10: ...and cover.
  This is just to reheat the centre and melt the cheese.
• 11: You may need to do this in batches, depending on the size of your pan.
• 12: Serve piping hot, whole or cut in two.

Remarks

You can use a different cheese instead of Brie, such as Camembert.
