Here's a new French twist on the famous American grilled cheese. This version plays on the great combination of spinach and eggs.

Step by step recipe


Stage 1 - 7 min.
Pan-fried cheese, egg and spinach toastie
Beat 2 eggs rapidly in a bowl, then salt and pepper. Cook with 1 tablespoon olive oil in a small frying pan on medium heat, rather like an omelette or scrambled egg.

Don't overcook; the eggs should not dry out.

Set aside.

Stage 2 - 5 min.

Butter 8 slices bread.

Stage 3 - 1 min.
Pan-fried cheese, egg and spinach toastie
Put a large frying pan on medium heat and add the bread slices, butter side down.

Stage 4 - 5 min.

Fry all the slices until browned.

Stage 5 - 4 min.

Top half the fried bread on the un-fried side with egg.

Stage 6 - 4 min.

Add the spinach.

Stage 7 - 4 min.

Top with slices of cheese (Brie here).

Stage 8 - 1 min.

Finish the sandwich with a second slice of bread and press down gently.

Stage 9

Put back in the pan on low heat...

Stage 10 - 5 min.

...and cover.

This is just to reheat the centre and melt the cheese.

You may need to do this in batches, depending on the size of your pan.

Stage 12

Serve piping hot, whole or cut in two.
Remarks
You can use a different cheese instead of Brie, such as Camembert.
Keeping: Should be eaten immediately.
